Beef tongue, heart, and liver are traditional, nutrient-rich cuts that many people overlook, but each one can be delicious when prepared properly. Tongue becomes tender and flavorful when simmered low and slow, heart cooks much like a lean steak when marinated and grilled, and liver is best pan-seared quickly with onions or used in pâté. These cuts are a great choice for customers who value using the whole animal, stretching their food budget, and adding deeply nourishing beef to family meals.
BEEF TONGUE:
Simmer the tongue in water or broth with salt, onion, garlic, bay leaves, and peppercorns for about 3–4 hours, or until it is fork-tender. Once cooked, let it cool slightly, then peel off the outer skin. Slice it thin or chop it for tacos, sandwiches, hash, or rice bowls.
BEEF HEART:
Trim away any tough connective tissue or silver skin, then slice it into thin strips or steaks. Marinate it with olive oil, garlic, vinegar or lemon juice, salt, pepper, and herbs. Cook quickly over high heat, like steak, or simmer it slowly in stews.
LIVER:
Slice liver thin and soak it in milk for 30 minutes to 2 hours to mellow the flavor. Pat it dry, season it, lightly dredge in flour if desired, and pan-sear it quickly in butter or oil. Liver is often cooked with onions because the sweetness balances the flavor.
