In French baking, a pâton is the humble lump of dough — the very beginning of every great loaf and pastry. I chose the name Le Pâton because that’s where the magic starts for me: with simple ingredients, careful hands, and the quiet patience of fermentation and lamination. I fell in love with French baking years ago and have spent countless early mornings perfecting flaky croissants, rich pain suisse, buttery danishes, and crusty sourdoughs. Everything at Le Pâton is made by hand in small batches, using traditional techniques and the best ingredients I can find. From pâton to perfection — that’s not just our tagline. It’s the way I bake.
