This is a fork from Nigella Lawson on NY Times. My youngest does not like sweet potatoes, so I have changed those to carrots. 16 oz is 2 servings and 32 oz is 4 servings. Comes with Sana Masoori rice (cooked by default - let me know if you want me to provide raw). Here are the ingredients and prep for making 6 servings, which is what I make when I cook this. Ingredients: 1-2 T oil 1 finely chopped onion 2 C (about 3) finely chopped carrots (Ella doesn't like sweet potatoes, but she is my curry buddy) 1 T minced ginger 2 cloves minced garlic 1 tsp - 1 T diced green chili - to taste 1 C red lentils 2 tsp ground coriander 2 tsp ground cumin 2 tsp ground turmeric 1 tsp ground ginger 1 14 oz can diced fire roasted tomatoes Salt to taste Chopped cilantro to taste Method 1. In a large pot over medium low heat, heat oil and sautee onion until softened. Add carrots and saute about 5 min. Add ginger and garlic, stir and reduce heat to low. 2. Add chile, lentils and spices to the pot. Stir until lentils are well coated in oil. Add tomatoes and 4 C water. Raise heat to boiling, reduce to a fast simmer. Cook uncovered until lentils and carrots are soft, stirring occasionally, about 25 minutes. 3. Season to taste with salt and continue to simmer until thickened, about 10 minutes. Whisk to amalgamate the lentils and carrots. If too soupy, increase heat and cook a little longer 4. Transfer to storage containers and allow to cool before freezing. 5. Serve hot with cilantro by itself, or over rice. It costs me ~$4.00 to make 48 oz of this stew using materials bought at retail at the HEB on Bandera and 1604 as of September 2026. The rice is sana masoori rice that is ~$17 for a 20lb bag, so the cost is negligible - figure ~$0.75 per serving. The added cost covers non-food items required, like plastic containers, gas to the store, etc.
